Hot Cinnamon Cider

A drink traditional used for wassailing the apple orchards on 12th Night was also served to the hungry and cold ploughman on his return home.

This tasty brew would also make a great alternative to mulled wine.

Ingredients

3½ pints (2 litres) farmhouse cider 6 whole allspice
4 tablespoons honey 4 cinnamon sticks
6 whole cloves Peel of one orange cut into strips

Method

  1. Place the cloves, allspice and orange peel in a square piece of muslin and tie up the corners.
  2. Place the spice bundle in a pan with the cider, honey and cinnamon sticks.
  3. Stir together until the honey has dissolved.
  4. Heat the liquid for about 5 minutes until hot, but not boiling.
  5. Discard the spice bundle and cinnamon sticks and service immediately.
  6. Drop in a couple of apple slices for garnish.
