Dobson's Bramble Cordial (or Loganberries)

A delightful drink from the hedgerow. the 'soused' fruit can also be used in a delicious fruit pie. Loganberries are more likely to be a cultivated fruit rather than in the hedgerows.

Ingredients

Method

  1. Fill a jar two thirds full with the fruit.
  2. Add sugar to a quarter way up the jar.
  3. Top up jar with the brandy
  4. Add two small cinnamon sticks and four split almonds.
  5. Keep this in a cool dark cupboard for three months, shaking the jar occasionally.
  6. Then filter the liquid into bottles.

The brandy soaked berries make a delicious pudding. Add them to peeled apple, sprinkle with sugar and cover with pastry in a pie dish. Cook as you would an ordinary apple pie.
